Our Story

ET-Delicatessen exists to bring a piece of Turkish gastronomy to your table. Our name says exactly what we do: "Et" is the Turkish word for meat, while "Delicatessen" means fine cured meats — charcuterie. Together, ET-Delicatessen stands for authentic Turkish charcuterie. But what we really want to give you is more than meat: an experience — the flavours, aromas and rituals of Turkish food culture, made accessible to everyone in Singapore.

Behind every product lie centuries of Anatolian craftsmanship — recipes and curing traditions perfected over generations. When you slice our sujuk into a hot pan at breakfast, lay pastırma on a board for friends, or warm kavurma over rice, you are not just eating: you are stepping into a way of life Turkish families have cherished for hundreds of years. Our mission is to share that heritage generously, so it belongs here too — on your breakfast table, at your gatherings, in your everyday cooking. Turkish charcuterie is a whole family of cured, spiced and slow-cooked meats with centuries of history behind them. If you have never tried any of it, here is the full range explained in plain words — what each one actually is, and the easiest way to enjoy it.

Sujuk
A semi-dry, lightly fermented beef sausage — think of it as the Turkish cousin of a spiced salami, but you cook it. Slice it and pan-fry until the edges crisp; the spiced beef fat does the rest. It is the star of a Turkish breakfast, classically with eggs.
Pastırma
Whole beef, salt-cured and wrapped in a fragrant spice paste (çemen), then air-dried for weeks — the original "pastrami". Eaten in thin slices straight from the pack, no cooking needed: a Turkish answer to cured ham.
Kavurma
Tender beef slow-cooked in its own fat until it falls apart, then preserved under that fat. Just warm it through in a pan. Rich, comforting and ready in minutes — wonderful with eggs or over rice.

A Heritage of Preservation

Long before refrigeration, the people of Anatolia had to make meat last — through hard winters, long caravan routes and journeys that could stretch for weeks. Out of that necessity grew an art of curing and preserving that still defines Turkish charcuterie today.

Sujuk — beef seasoned with garlic and spices, then air-dried and fermented — kept for months and travelled easily in a saddlebag. Pastırma, prime beef salt-cured and coated in çemen (fenugreek, garlic and chilli), was the prized provision of merchants and horsemen crossing the Ottoman lands. Kavurma, meat slow-cooked and sealed under its own fat, let families keep precious meat well beyond the season it was made. Köfte, by contrast, belongs to the table of the moment — hand-shaped minced beef folded with onion, herbs and warm spices, then grilled fresh over open fire; today we freeze it at the peak of freshness so that age-old gesture is always within reach. What began as a way to survive the journey became, over generations, a cuisine worth travelling for.

Sujuk & Köfte Sandwiches
Few things beat ET Deli meats in a sandwich. Köfte brings juicy, charred, herb-and-spice depth; sujuk brings that bold, garlicky, slightly fermented punch — and its own rendered fat does the cooking. Both are fully seasoned already, so warm bread, a little salad and a smear of sauce are all you need: the meat carries everything. Crisp the edges, tuck into flatbread or a crusty roll, and you get a five-minute lunch that tastes like an Istanbul street stall.
Two Sandwiches to Build
  • Köfte sandwich: grilled ET Deli Köfte · flatbread or baguette · tomato · onion · lettuce · cacık (yogurt-cucumber-mint)
  • Sujuk sandwich: pan-crisped ET Deli Sujuk · sesame roll · melted kasar or cheddar · tomato · rocket · chilli flakes
  • Both love: a squeeze of lemon, a pinch of sumac, and warm (not hard-toasted) bread
How to Cook

Köfte: grill or pan-sear 4–5 min per side until charred; load into warm flatbread with salad and a spoon of cacık.

Sujuk: slice on the diagonal and pan-fry dry, 2 min per side, until the edges curl and crisp — no oil needed.

Build the sujuk sandwich while hot so the cheese melts against the meat; add tomato, rocket and chilli.

Press lightly in the pan for 30 seconds for a toasted, panini-style finish.

Serve immediately, while the bread is warm and the meat still sizzling.

Tip: a thin layer of sauce on both cut sides keeps the bread from going soggy and ties the flavours together.
